THE COUNTDOWN IS ON - ONLY 1 DAY TO GO!!! Can you smell the aroma of freshly roasted coffee beans? Or was that freshly cured meats from the Salumi Salami stall?  So many new and exciting products to discuss with their producers, so many to sample that anyone who has the slightest interest in food should not miss the opportunity to experience all that is on offer at this fabulous food expo! Held at the Yamba Community Centre in Treelands Drive on Saturday 31st January.

Two sections of this event are the Foodie Exhibition in the main hall and the interesting and educational Master classes.

Paul, from Nimbin Valley Dairy, is presently doing a Masters Cheese making course in France and he will be at the expo to share his experience with participants at his Master Class. Botero are treating us to a special coffee cupping with their unique New Guinea blend of beans. If you are a coffee fan this Master class is a must for you!

Seafood is a specialty of the Clarence River and every enthusiast who enjoys the tasty meat of fish and prawns is keen to know how they are caught and processed. So we have two options for you - one being the fresh ocean seafood from the Clarence River Cooperative and the other being the aquaculture farms Tru Blue Prawns and Palmers Island Mulloway. So each of these Master classes will have a representative explain in interesting detail their daily passion. Representing Tru Blue Prawn Farm, Antony Perring of Irons and Craig, will demonstrate "Flash fried prawns with miso and sesame" and "ceviche of prawns with lime and coriander".  Peter Nicholson, Nicholson Fine Foods will demonstrate the art of sashimi with Mulloway from Palmers Island Mulloway. Representing the Clarence River Fisherman's Cooperative, Mary Drum of Caperberry Cafe, will demonstrate how to smoke sea mullet, taste the difference and oiliness of skin on skin off. Then do a Tom Yum with prawns, cuttlefish and mullet, then Mary's favourite chilli garlic prawns with cheese...... who says seafood and cheese don't mix?!!

Spring Grove grassfed Beef from Atron Enterprises Pty. Ltd. will be represented by a true beef farmer to explain the science of producing prime beef cattle. Whilst Antony Perring of Irons and Craig will demonstrate beer battered beef brisket and a hot smoked carpaccio of beef. If you are into curing meats then don't miss the multi award winning Salumi Salami Master class where Michael will explain and demonstrate his passion for all things cured!!!
